This month's guest chef is Briarwood's very own Allen Hart. Allen is the former proprieter and chef at one of the hippest lunch restaurants downtown, the Blue Cafe. Since it's starting to get chilly, Chef Allen is sharing his popular Blue Cafe Gumbo recipe with the friends of Briarwood. Here's your shopping list:
3-4 lb. chicken
1 1/2 lbs. smoked sausage
flour /
oil
4 slices bacon
1 large bell pepper
2 large onions
3 cloves garlic
6 stalks celery
12 -16 oz. okra
1/2 cup Parsley
2 cans Rotel tomatoes
3 bay leaves
Worcestershire
Dried thyme
Crushed red pepper
3 quarts chicken stock
salt, black pepper & cayenne to taste
2 cups white rice
